Florentine Biscuits

a85b27a2483d11e2957722000a1f9a39_7Florentines are by far one of my favourite sweet treat out there! Only catch is they aren’t particularly healthy. This weeks challenge was to create a healthy, guilt free version..and what do you know – success! Yes there’s no deliciously sweet condensed milk which ill admit back in the day I used to over indulge in. They are gluten free – therefore no cornflakes but don’t let this put you off! They are packed full of Christmassy flavours and taste incredible.


  • 1 1/2 cups Almonds
  • 1/2 cup Peanuts
  • 100g Sultanas
  • 100g Glace Cherries
  • 50g Glace Ginger
  • 1/4 cup shredded Coconut
  • 1/2 cup Honey
  • 1 tsp Vanilla
  • 1 egg
  • 1/4 cup Coconut Oil
  • 1 tbsp Orange Rind
  • 80% Dark Chocolate
  1. In a food processor combine almonds, peanuts and coconut until almonds are chopped and ingredients are combined (do not over blend! you still want these buscuits to be crunchy!).
  2. Add sultanas, cherries, ginger, honey, vanilla, egg, oil and orange rind to the processor and mix together on a medium speed.
  3. Roll into balls then press flat onto a baking tray. Baking in a 180 degree over for approx 20 mins or until golden.
  4. Allow to cool completely then paint the flat side of the biscuit with dark chocolate. Set in fridge.
